Gather your supplies to make some delicious Crêpes.
Melt 2 tbsp of butter in your microwave.
In a bowl, add 1/2 cup water, 1/2 cup milk, and your melted butter.
Add 2 eggs to your wet mixture.
Whisk well.
Add 1 tsp vanilla extract, as well as 2 tsp of sugar.
Add 1 cup flour to your wet ingredients.
Whisk well to end up with a smooth and a little watery crepe batter.
Use your spatula to pour your batter into your measuring cup. I find this the easiest way to pour out equal amounts with little cleanup.
Lightly oil the bottom of an 8-inch non-stick skillet, or spray the bottom with Pam or any other non-stick cooking spray. Turn up the heat to about medium-high.
Pour out about 1/4 cup batter into your pan.
Swirl your pan around, making sure to coat the bottom of your pan. You may add more batter if there are empty spots in the pan.
After about 1 min, flip your crepe over with your spatula. Cook on the other side for about 30 sec. On your 2nd and 3rd crepe, the pan will already be hot, so cook time is about 1 min on both sides.
Let the crepe slide out of the pan, and onto your plate. Best served warm.
I sliced some strawberries and poured chocolate syrup on top for my breakfast. You may try Nutella, honey, pancake syrup, marmalade.. The choice is up to you! Enjoy!
