Chop the onion and the garlic.
Add the chipotle paste and the egg..
..as well as the tomato paste.
Add the sambal oelek, or if you like me realize you don't have any, add chili flakes instead.
Add beef broth, paprika powder and black pepper.
Add cream and thyme.
Now use your handmixer to blend these ingredients.
Mix the breadcrumbs with the water. Wait a couple of minutes, then add the breadcrumbs mix to the meat.
Then mix the "sauce" that you made with the blender with the ground beef. Taste it and add additional spices if needed.
Form meatballs and put on a tray or a plate.
The don't need to be in a certain shape; be nice to yourself!
Set aside while you fry the rest. Keep warm, at least the amount if meatballs you will eat now.
When you're done there's no need to clean the frying pan in between. Instead add the onion and garlic to the hot pan.
Like so; soften the red onion and the garlic which are the base of the sauce.
Add the canned tomatoes, oregano, salt, sugar and black pepper.
Then add the wine.
Add the fresh thyme.
Add beef broth, tomato paste and sambal oelek (or if you don't have any/run out add chili flakes to your liking)
..and add the cooking cream.
Stir again, then taste the sauce and see what's missing. Maybe it needs more wine? Or perhaps more sugar? More herbs?
Put back the meatballs in the sauce.
Serve with pasta, rice, quinoa or whatever you prefer.
