How to make candied lemon glaze

Wash and zest one lemon - long strips and/or short strips- and set aside. Boil one cup of water.

Place the zest into a strainer/sieve and dip into boiling water. Leave for 30 SECONDS and then remove. Discard the boiling water.

Place the zest into a saucepan and add 1/4 cup of water.

Add 1/4 cup of sugar to the saucepan and place on low heat until the zest softens and the sugar becomes syrup.
