Preheat oven to 350*. Mix together mashed bananas, peanut butter, applesauce, vanilla, salt, and cinnamon.

Add in the oats, chocolate chips, coconut, and optional nuts - stir until well combined.

Here's what your dough will look like- much looser than normal cookie dough.

Spoon by rounded 2-3 Tablespoons onto a lined baking sheet, and flatten slightly. Bake for 20-30 minutes or until lightly brown.

Remove from oven and let cool on cookie sheet for 15 minutes, then move to cooling racks.
