Heat oil/vegetable oil in a frying pan then cook the eggplant slices until golden brown on both sides.
Set aside after cooking the slices. This is an example of how it should look.
My version of making savoury white sauce with cheese. Add the flour then gradually add the milk until flour liquify. Also add the butter and seasonings for flavour at a medium low heat
Under the medium low heat, add in the various cheeses and stir gently. Set aside extra cheese for the top. Leave for 2 mins the remove from heat. Don't leave it to get thick
Arrange a layer of eggplant in an ovenproof dish similar to the way you lay lasagna pasta
Add the savoury white cheese sauce over the layer similar to the way you add the sauce over lasagna pasta
Continue to add layers and savoury white cheese sauce
After this, on top(final layer) add some more sauce.
Then for the final touches before going in the oven, add the remaining cheese.
baked for 35-40 mins until golden brown.
