How to cook spicy tapioca

Take one and half cup of tapioca (you can usually find it in the baking section of grocery store, do not use instant tapioca). I got mine from a nearby indian store.

Gently wash then soak tapioca in about 1/2 cup water for 4-6 hours. Do not add more water or it will become mushy. Water should be just the same level as tapioca. Cover it.

After 4 hours. Tapioca has absorbed all the water. You can soak it overnight too if you want to eat it as a breakfast.

Ingredients- boiled potatoes, chopped peanuts, curry leaves(optional), green chillies, red chillies, asafetida, sesame seeds, lemon juice

Finely chopped cilantro. Save some for garnishing.

Add oil to a pan

Add cumin seeds once oil is hot. Let it splutter for few seconds.

Add asafetida, red chillies, peanuts. Stir until peanuts are lightly golden brown

Add few curry leaves. You can skip it if you want, but it enhances the flavor so check your local indian store.

Add sesame seeds, green chillies and stir it for few seconds

Add boiled potatoes, let it turn little crispy and golden brown

Finally add soaked tapioca, lemon juice and dry spices

Dry spices- turmeric, salt, red chilli powder(optional), coriander powder(optional)

Add turmeric, salt, sugar, dry coriander powder(optional). You can add red chilli powder too if you want it more spicy.

Mix it gently, stir fry for 3-4 mins on medium heat or until tapioca becomes translucent (like pearls). Keep stirring continuosly as it sticks to the bottom.

Garnish it with cilantro and serve it hot!! Hope you enjoyed my guide!!! :)
