How to make a zucchini chocolate cake


Grate the zucchini.

In a bowl whisk eggs with..

..oil and sugar.

Like so.

Add the grated zucchini.

Stir.

In another bowl mix the dry ingredients: flour, cacao powder, bicarbonate, baking powder and bourbon vanilla.

Like so. If you don't have a sifter see to that there aren't any lumps in the cacao powder.

If you do have a sifter use it!

Stir again..

At this stage add the nuts.

Chop them before adding them to the batter.

..like so. Instead of pecans you can use walnuts, pistacchios or hazelnuts.

Grease a tin and add breadcrumbs. Then pour the batter into the cake mold.

Cook in the oven at 175 degrees C for about 45-60 min. depending on your oven.

The recipe comes from this great (Swedish) cookbook "Two Sisters' sweets".

The cake is ready when a tooth pick comes out clean. Let cool inside the tin. Enjoy with a cup of tea or a glass of milk.
