How to make coconut almond granola

Preheat oven to 350 degrees Fahrenheit.

Pour oats into a large mixing bowl.

Add coconut.

Add almonds.

Mix well.

In a separate bowl that can be microwaved, add coconut oil.

Add honey.

Microwave for 1 minute 15 seconds until coconut oil melts.

Blend with a whisk.

Pour mixture over granola.

Stir well so all granola is coated.

Place in an ungreased baking dish.

Place in oven and set timer for 45 minutes.

Remove from oven every 5-8 minutes to stir. This keeps the top layer from burning.

Return to the oven after each stirring break.

After 45 minutes, your granola looks like this! Remove from oven and stir occasionally as granola cools and hardens.

Add cashews and dried nuts if desired. Suggestions include dried cherries, cranberries, pineapple, apricots, figs, dates - whatever you like!

Stir well.

Store in an airtight container. Enjoy!
