Agar agar can be found at most Chinese grocery stores. Compared to gelatin, agar agar has a more dense and coarse consistency.
Make sure you clean the Pandan leaves thoroughly as you can see there are hidden dirts trapped in between.
Tie a knot.
Bring 3.2L of water to boil. Add the tied knot Pandan leaves and boil for about 10 minutes.
Wash the agar agar.
As you can see the water starts to have some light green tint after boiled for 10 minutes.
Discard the Pandan leaves.
Add the washed agar agar and cook in medium heat.
Once the agar agar start to dissolves, add sugar.
Is up to you what colour you like for your agar agar. I go with this rose pink.
Add half a teaspoon. You don't want it to look too bloody.
Bring to a boil, stirring continuously till sugar and agar agar fully dissolves.
You can see it look pretty clear now.
Pour agar agar into a rinsed mould and leave to set. Refrigerate for at least 4 hours.
Cut into square and best serve chill. Enjoy!
