How to bake bread pudding in an alto shaam combi oven


Day old bread

Slice and lay out on pans. Bake at 350F (177C) for 10 minutes.

Combine eggs sugar and milk.

Pour mix over bread and allow to soak in.

Spray pans

Add chocolate and almonds. Mix in.

Put in pans and sprinkle with more sugar.

Load into Combi oven

Bake Combi mode at 325F (163C) with 50% humidity for 30 min.

Serve warm with anglaise
