How to make gluten-free + lactose-free baraziq cookies

Grill..roast the sesame and chop the pistachios. Recommended to grill the sesame.

Prepare the dry ingredients. Rice flour+corn starch(maizeina in France)+1 tsp mehlepi محلب + tsp xanthan gum+a pinch of salt. sift over the butter. Mix until homogenous.

200 g Rice flour

+ 100 g maizeina(corn starch)

+ 1 tsp xanthane gum

1tsp mehlepi محلب

Pinch of salt

Cream 150 clarified butter+100 g icing sugar

Then add 1 egg (55-60g) and the vanilla extract continue to mix 1 min

Then sift the dry ingredients over the butter-sugar mixture. Mix until homogenous. Finish with 2 tbsp of almond milk

Divide the dough into 3 or 4 and make cylinders wrap and refrigerate

Cut into 1 cm discs. Either make a small ball or Dip the disc in the sesame with a little pressure then dip it in the chopped pistachios pressing slightly. Then put it on the tray press again

Bake in a preheated oven 14-15 mins
